Since I began training for a marathon, I realized how vital it is to eat a wholesome meal upon waking up. A smoothie bowl of super foods packed with vitamins, minerals, and antioxidants, helps to energize for the day ahead in a delicious and simple way.
Antioxidant-Rich Smoothie Bowl
- 1 cup light Greek yogurt
- 1 cup mixed berries
- ½ of a banana
- 1 packet Carnation Breakfast Essentials® Vanilla Light Start™
- 1 cup ice
- ¼ cups fresh blueberries
- ¼ cups fresh raspberries
- ½ banana, sliced
- 1 tablespoon chia seeds
- 2 tablespoons toasted coconut shavings
- ¼ cups granola
- Optional: dark chocolate chips, sliced almonds or pecans
Blend yogurt and ice in a blender or Nutribullet until smooth. Add the mixed berries, banana, and Carnation and mix until relatively smooth. Don’t blend to liquid form- it will be eaten by a spoon, not through a straw, so a little texture is good!Pour smoothie into a bowl and garnish with toppings of your choice. Serve fresh, immediately.I find that the prettier my food looks, the more likely I am to indulge. And if it’s in a nutrient-packed bowl such as this, you don’t feel guilty in the least!
